Due to the unique processing and wide application of freeze-dried fruits, quality control is crucial throughout the entire supply chain, from raw material selection and production to finished product storage and transportation. It is a core element in ensuring nutritional value, safety, and market competitiveness. Only by establishing a systematic and traceable control system can we ensure consistent product quality at every stage.

Raw material quality is the starting point for control. Priority should be given to selecting fresh fruits that are moderately ripe, free from pests and diseases, and without mechanical damage. These fruits should be graded according to variety, size, and ripeness to reduce uneven drying and color fluctuations caused by differences in raw materials during processing. After harvesting, fruits should be rapidly pre-treated to avoid prolonged exposure that could lead to enzymatic browning or microbial proliferation. The washing process must combine running water with appropriate disinfection methods to effectively remove surface contaminants and potential pathogens, laying a clean foundation for subsequent processes.

Production process control is key to ensuring quality. During the pre-treatment stage, the cutting specifications should be standardized, and color-protecting measures should be implemented according to the characteristics of the fruit. This may include soaking fruits and vegetables in vitamin C or citric acid solution and briefly blanching to inactivate enzymes, thus slowing down oxidation and color deterioration. Pre-freezing requires rapid cooling to form tiny ice crystals, maintaining cell structure integrity and preventing texture collapse or decreased rehydration after freeze-drying. The vacuum sublimation drying stage demands precise control of temperature and vacuum levels to prevent localized overheating that could lead to nutrient loss, dull color, or flavor alteration. Desorption drying ensures complete removal of bound water, stabilizing the finished product's moisture content between 2% and 5% to balance shelf life and crisp texture.

Finished product inspection and packaging are equally essential. After drying, the product should be cooled in a clean environment, promptly removing debris, color variations, and foreign matter. Moisture content, microbial limits, sensory evaluation, and physicochemical testing should be conducted to ensure compliance with relevant food safety standards. Packaging materials should possess high oxygen barrier, moisture-proof, and light-proof properties, using vacuum or nitrogen-filled sealing methods, and may be supplemented with oxygen absorbers to extend shelf life. Storage and transportation must avoid high temperature and humidity and direct sunlight to prevent moisture absorption, spoilage, or oil oxidation.

Full-process traceability management is the institutional guarantee for quality control. A comprehensive record-keeping system should be established, covering raw material sources, process parameters, test results, and batch flow. This system will allow for rapid identification of the cause and corrective action in case of any anomalies. Regular audits and continuous improvement, along with constant optimization of processes and inspection standards, are essential to maintaining the high quality and safety of freeze-dried fruits in large-scale production, meeting the stringent requirements of high-end markets and special consumer groups, and consolidating their competitive advantage in the food industry.
