To produce high-quality freeze-dried fruit stably and efficiently, it is essential to master a series of key techniques in raw material selection, process control, equipment application, and quality management.

🍓 Raw Material Selection and Pre-treatment Techniques

• Raw Material Screening: Select raw materials that are moderately mature, free from pests and diseases, and without mechanical damage. Grade them according to size and maturity; this is fundamental to ensuring uniform drying and batch consistency.

• Cleaning and Disinfection: Use running water or methods combined with ozone or diluted salt water to clean and remove dirt, pesticide residues, and microorganisms. The process must be rapid to prevent quality degradation.

• Slicing and Color Protection: Slice the fruit to uniform specifications according to product requirements (whole fruit, slices, cubes) to facilitate heat and mass transfer. For fruits prone to browning, such as apples and bananas, color protection can be achieved by blanching or soaking in vitamin C or citric acid solutions to reduce color deterioration.

 

🧊 Pre-freezing and Drying Process Control Techniques

• Rapid Pre-freezing: Rapidly freeze materials at -30℃ to -50℃ to form fine ice crystals, minimizing damage to cell structure. This is a prerequisite for achieving a crisp texture and good rehydration properties.

• Optimizing the Freeze-drying Curve: In the sublimation drying stage, employ a strategy of "low temperature + moderate vacuum + slow temperature increase" to avoid overheating of the material surface, which could lead to collapse or darkening of the color. In the desorption drying stage, gradually increase the temperature to remove bound water, controlling the final moisture content at 2%–5% to ensure long-term product stability.

• Ensuring Uniform Drying: Arrange materials reasonably, avoiding excessive thickness or stacking, and ensure uniform heat distribution within the freeze dryer to prevent under- or over-drying in certain areas.


📦 Finished Product Handling, Packaging, Storage, and Transportation Techniques

• Post-processing and Testing: After drying, rapidly cool in a clean environment, removing debris and products with color differences. Strictly test the finished product for moisture content, microorganisms, color, and taste to ensure compliance with standards. • Moisture-proof packaging: Use packaging materials with high oxygen barrier and moisture-proof properties, such as aluminum foil bags and iron cans. Vacuum or nitrogen-filled packaging is used, and oxygen absorbers can be added as needed to extend shelf life.

• Storage and transportation conditions: Finished products should be stored in a cool, dry, and dark environment, avoiding high temperature and humidity. During transportation, prevent packaging damage and moisture absorption to prevent product deterioration.

• Full-process quality control: Establish a traceability system from raw materials to finished products, record key process parameters, and continuously optimize the process through data analysis to stabilize product quality.

• Improve energy efficiency: Reduce energy consumption by optimizing freeze-drying curves, shortening drying time, and rationally scheduling production batches. Selecting high-performance freeze-drying equipment is also an important way to improve efficiency and reduce costs.

• Application scenario adaptation: Adjust the process according to different uses. For example, ready-to-eat snacks emphasize crispness and color; while when used as ingredients, rehydration properties and particle size need to be considered to meet subsequent processing requirements.
