As an important deep-processed product category in the food industry, freeze-dried fruit has formed a multi-dimensional classification system based on raw material characteristics, processing form, and functional positioning, providing precise product selection for different application scenarios.

From the perspective of raw material source, it can be divided into single-fruit freeze-drying and compound-fruit freeze-drying. Single-fruit freeze-drying uses common fruits such as apples, strawberries, mangoes, and bananas as raw materials, highlighting the unique flavor and nutrition of the original fruit; compound freeze-drying is made by mixing two or more fruit slices or pieces, taking into account both flavor richness and nutritional balance, and is commonly found in mixed fruit and vegetable crisp products.

Based on processing form, it is mainly divided into three categories: whole-fruit freeze-drying, slice freeze-drying, and granular/powder freeze-drying. Whole-fruit freeze-drying is primarily suitable for small berries (such as blueberries and raspberries) or fruits that easily maintain their shape, preserving the fruit's intact appearance. Sliced ​​freeze-drying is the mainstream form, facilitating control over thickness and rehydration efficiency, and is widely used in snacks and baking ingredients. Granulated or powdered freeze-dried fruit is produced through a pulverizing process, with particle size adjustable as needed; it's often used in meal replacement powders, yogurt toppings, or functional food bases to enhance product integration.

Based on function and application, freeze-dried fruit can be further categorized into ready-to-eat, cooking, and specialized types. Ready-to-eat freeze-dried fruit emphasizes a crisp texture and pure flavor, targeting the casual snack market. Cooking freeze-dried fruit, after rehydration, has a texture similar to fresh fruit, suitable for desserts, salads, and other culinary applications. Specialized freeze-dried fruit is designed for specific groups or processing needs; for example, infant food-grade freeze-dried fruit requires strict control of impurities and microbial indicators, or additive-type freeze-dried fruit is incorporated into grains and nuts to form combined nutritional packets.

A scientific classification system not only helps producers optimize processes and quality control, but also guides the consumer market to choose according to demand, promotes the refined penetration of freeze-dried fruits in multiple fields, and strengthens their adaptability and competitiveness in the modern food supply chain.
